Our Persian cooking class Bristol is a hands-on evening at Cooking It, the independent cookery school at 37 Gloucester Road, Bishopston, Bristol BS7 8AD. You cook a spread of cold mezze, hot mains and desserts from Persian dining traditions, working with pomegranate, aubergine, yoghurt, mint, ripe tomatoes and Persian spices.
There are never more than 12 of you. Ingredients, equipment and aprons are all provided, and when the cooking is done you sit at the long communal tables and eat it together. The class is £85 a person. Cooking It was founded by Monica Worsley and has been teaching for about ten years.
A Persian table is built on contrasts: cool, herby mezze beside slow, rich mains, with sweet and sour running through both from pomegranate and dried lime, and yoghurt and mint as the cooling elements. The class takes about 2.5 to 3 hours, and that includes the meal. Evening sessions start at 6:00 pm. You arrive, we hand you an apron and your ingredients, and the group works through the menu together.
