Very easy very cheesy courgette fritters

These are extremelly easy to make for the children and the results are lovely! This is an easy way to sneak in some very good for you greens into a meal. These little wonders make a good finger food and delicious to eat either cold or hot.

The very small people can have a go at cracking the eggs into a bowl, and then beating them with a ballon wish or a fork. They can try to grate the courgettes, carefully so that they do not grate their fingers. Sprinkle the salt and pepper. Stir the flour and add the cheddar cheese and mix it all in, ready for the pan.

What you will need for the Very easy very cheesy courgette fritters


6 eggs

250 grs of cheddar cheese, grated. I like it with feta cheese too.

250 grs of courgette, grated.

50/75 grs of leeks

50 grs plain flour

salt and pepper to taste

1 tbsp of olive oil

What to do to prepare Very easy very cheesy courgette fritters



  • Crack the eggs into a large bowl and beat well. Add the flour first and mix well so that there are no lumps of flour. Add the cheddar cheese, courgette, leeks, salt and pepper. Beat again to combine.

  • heat the oil in a non stick frying pan and pour in a tablespoon of the mixture (depending on how big the pan is you will be able to add a few in one go. Cook over a gentle heat for 2-3 minutes until the base of the small cakes is set. Now turn around and again let it cook for 2-3 minutes until when you press it no oil comes out of it and/or it is golden.

  • Put the small cakes onto a plate and they are ready!

  • I like to eat them with sweet chilli sauce.
