Spanish Orange and Almond cake
I remember that when I was small my grandmother used to make an orange cake, I loved it! I found this recipe in the Claudia Roden's book, Food of Spain, which is a great book and a lot of the recipes are authentic Spanish recipes. The cake is phenomenal and gluten free, dairy free as it does not use flour or butter. Try it you will not regret it. I usually cover the cake with a chocolate ganache but that is optional.
INGREDIENTS
2 large oranges
6 eggs
½ pound ground almonds
½ pound sugar
1 teaspoon baking powder
PREPARATION
Wash the oranges and simmer them, unpeeled, in water to cover for 2 hours. Cool, cut them open and remove the seeds. Puree the oranges in a food processor.
Preheat oven to 180 degrees.
Beat the eggs in a food processor or large bowl. Add the remaining ingredients, including the orange puree, and mix thoroughly. Pour into a buttered and floured cake tin, with a removable base if possible.
Bake for one hour, or until a knife inserted in the center comes out clean. Cool in the tin before turning out.
Optional: Chocolate Ganache Proportions. Layer cake filling and thick glaze: 1:1, equal parts chocolate and cream. Chocolate truffles: 2:1, two parts chocolate to one part cream. Soft icing and pourable glaze: 1:2, one part chocolate to two parts cream.
