Thermomix Cheese and bacon pastries
Thermomix Cheese and bacon pastries are so quick to make and are excellent for brunch, lunch or a picnic. If you like to make your own pastry, the recipe is in the basic cookbook. Use your imagination and fill them with anything that you like. I like cherry tomatoes, pesto with cheese or chorizo cubes to substitute the bacon.You can also make them without the Thermomix. But with the thermomix they are quicker and also less washing up.
Ingredients
10 min to prepare and 20 to cook. this recipe makes 8 portions but you can cut the pastry smaller to make more. The recipe is easily doubled.

50 grams Parmesan cheese, Cut into pieces
50 grams Manchego cheese, Cut into pieces
60 grams Onion, Halved
20 grams Olive oil
150 grams Pancetta cubes
2 pinches Black pepper
2 Large eggs
1 sheet Puff pastry
4 Slices bacon, Smoked and halved
Method
1,- First of all, preheat the oven to 200oC. Line a baking tray with baking paper and set aside.
2,- In addition, place the cheeses in the Closed lid and grate 10 sec/speed 10. Transfer to a bowl and set aside.
3,- place the onion in theClosed lid and chop 3 sec/speed 5. Scrape down the sides of the Closed lidwith the spatula.
4,- add the oil and pancetta then saute 5 min/120c/speed 1. Leave the mixture to rest for 5 min.
5,- add the pepper, egg and 75 grs of the cheese then mix 10 sec/speed 4
6,- cut the pastry sheet into 8 squares, place on the prepared baking tray and brush with the beaten egg. In the centre of each piece, place diagonally 1 tbsp of reserved mixture and top with a piece of bacon (also diagonally). Fold the two corners of pastry over the top of the bacon and press together to join them. Brush with beaten egg and sprinkle with the remaining cheese mixture.
7,- Finally, Bake for 20 min until cooked and golden. Seve warm or cold.
