Young children's cookery-Veggie samosas
Young fingers will love making these. They are fun to make, are bursting with good stuff and they are quite delicious. They are also the perfect snacks on the go, so ideal for a lunch box or take to a picnic in the park.You can use any vegetable that you like, potatoes, onions, mushooms, sweetcorn, broccoli, the options are endless.

300g swede, finely diced
300 grs carrots, finely diced
4 tbsp. frozen peas
1 tsp garam masala
lemon juice, to taste
vegetable oil, for spraying
4 sheets of filo pastry
Nigella seeds or sesame seeds, for sprinkling.

- Preheat the oven 180 C
- Chop all the veggies quite small.
- In the frying pan, dry fry the vegetables for 5 minutes over a medium heat until slightly soften. Season with garam masala, add a squeeze of lemon juice.
- Spray two sheets of the filo pastry with oil and then sandwich them together. Cut the sandwiched sheets into 3 strips.
- Blob a spoonful of vegetable filling at the bottom corner of each strip of pastry. One by one fold the strips to create triangles. Repeat with the remaining filo pastry. Spray each samosa with a little more oil and sprinkle with the seeds.
- Place the samosas on a baking sheet and cook in the oven for 15-20 minutes or until lightly browned. They are nice warm or cold.
