The Art of Sushi: Master the Rolls is our hands-on sushi making class Bristol at Cooking It, 37 Gloucester Road, Bishopston, Bristol BS7 8AD. You cook in a group of no more than 12, make the sushi yourself, then sit at the long communal tables and eat it together.
It is pitched at beginners through to intermediate cooks. Ingredients, equipment and aprons are all provided. Cooking It is an independent cookery school, founded and run by Monica Worsley, teaching for about ten years.

Sushi is built on properly cooked and seasoned rice, and this sushi making class in Bristol covers that first. The rice then needs time to cool before it can be rolled. The class also covers the knife work for fish and vegetables. From there you make two kinds of roll, maki (seaweed on the outside) and uramaki (the inside-out roll, rice on the outside), and pay attention to how flavour, texture and presentation balance in each one. Compared with a restaurant sushi session, this is a cookery-school class with a sit-down meal at the end.
Seasoning the rice means dressing it while it is warm so that every grain carries the flavour, and letting it cool is what lets it hold a roll. Maki is the familiar roll with the seaweed on the outside; uramaki turns that inside out, with the rice on the outside and the seaweed wrapped around the filling. The knife work covers fish and vegetables, because uneven pieces make an uneven roll. Flavour, texture and presentation are looked at together for each roll, so you learn to judge a finished piece, not just assemble it.
