Thermomix Best Sausage casserole

One of my daughters loves Sausage casseroles! I used to make them in the stove. Last night I attempted to make it in the Thermomix. Everyone agreed that this was the best sausage casserole ever! I allowed 3 fat Cumberland sausages per person (my family are not big eaters) but you can add another 1 or 2 per person (the bowl won't even be full). If you add more sausages I would add another tin of tomatoes, 50 grs of chorizo, 4 rashers of bacon, another 1/2 tin of water. I love the flavour that the chorizo gives to it (not surprising!). I served with boiled mini potatoes and steamed green beans. Try to make it, it is just lovely on a cold winter's night.

INGREDIENTS (4 portions)

• 12 Cumberland sausages (this allows 3 per person)
• 1 onion halved
• 1 garlic clove
• 20 grs olive oil
• 6 bacon rashers plus 100 grs of chorizo (roughly chopped)
• 1 tin of chopped tomato
• ½ tin of water
• 1 tablespoon tomato puree
• 1 teaspoon of smoked paprika
• 1 teaspoon of oregano
• 1 bay leaf
• 1 tin of butter beans
• salt and pepper

RECIPE'S PREPARATION
• Brown the sausages in the over for 20 minutes at 200° turning them after 10 minutes. Put aside)
• Place oil, onion, garlic, chorizo and bacon into thermomix bowl and chop speed 5 for 3 seconds.
• Scrape sides of the bowl and sauté for 3 minutes 120 temp speed 1.
• Add the paprika, chopped tomatoes, tomato purée, water, oregano, bay leaf for 4 minutes, temp 100, speed 1.
• Cut in half pre cooked sausages , add to thermomix bowl together with the butter beans and cook on 100° Reverse, Speed spoon for 15 or 20 minutes
• Add salt and pepper to taste
• Serve with mash or boiled potatoes, steamed vegetables or rice.
