Chicken Cacciatore Thermomix

Chicken Cacciatore Thermomix is so unbelievably easy to make and the results are fantastic! Try it seriously it won't disappoint you. Serve with mash potato, cooked rice and your favourite salad. The vegetable stock paste recipe can be made fresh in your Thermomix (you can find it in the Basic Cookbook).
Chicken Cacciatore is one of those recipes that you always find in Italian cookbooks, in fact Jamie Oliver has got one in his Jamie's Italy book that it is absolutely delicious. His is made with red wine instead of white. I like it both ways.
(serves 6) takes 10 minutes prep and 50 minutes to cook
Ingredients for the Chicken Cacciatore Thermomix
1 onion, cut into halves
1 garlic clove
2 springs fresh basil, leaves only
2 springs of parsley or coriander, leaves only
40 grs olive oil
6-8 skinless chicken thigh (depending on the size)
400 grs crushed tomatoes
100 grs dry white wine
1 tbsp. vegetable stock paste
1 tsp dark brown sugar (optional)
2 pinches of salt
2 pinches ground black pepper
1 red pepper (aprox 200 grs)
100 grs fresh mushrooms
80 grs pitted black olives
Preparation for the Chicken Cacciatore Thermomix
- Place the onion, garlic, parsley and basil into the mixing bowl and chop 3 sec/speed 7. Scrape down the sides of the bowl with the spatula.
- Add the olive oil and sauté 5 min/120c/speed 1.
- Put the chicken thighs to the mixing bowl and cook 5 min/120 c/reverse/speed 1
- Now add the crushed tomatoes, white wine, vegetable stock paste, dark brown sugar (optional), salt and black pepper and cook 15 minutes/100 c/reverse/speed 1, placing the simmering basket instead of the measuring cup onto the mixing bowl lid.
- Add red pepper, fresh mushrooms and black olives and mix well with the spatula. Cook for a further 15 min/100 c/reverse/ speed spoon, placing the simmering basket instead of the measuring cup onto the mixing bowl lid.
- Allow to rest for 5 minutes before serving.
