Thermomix Hot Cross Buns

Thermomix Hot cross buns are absolutely beautiful. They are perfect for breakfast or in the afternoon when you are feeling slightly hungry and want to eat something small. The trick to getting the shiny look is the apricot jam which just gives them another edge to this classic British bread. If you want fresh bread in the morning for breakfast, why not make the dough in the evening and leave in the fridge to proof overnight. The next morning, take out the dough and follow the steps as per recipe. They turn out gorgeous and store well for 3-4 days.
Ingredients
Thermomix Hot Cross Buns:
250g whole milk
1 Tbsp dry active yeast
60g light brown sugar
60g butter
1 egg
500g plain flour
1 pinch sea salt
1 tsp mixed spice
150g sultanas
Flour paste: 4 Tbsp flour, 3 Tbsp water
To finish: 50g apricot jam
First, Place the milk, yeast and light brown sugar in the mixing bowl. Warm 2 Min. / 37°C / Speed 2.
Add the butter, egg, plain flour, mixed spice, salt and sultanas. Knead 2 Min.
Leave to rise until doubled in size for an hour. Then remove the dough and place on a floured surface. Cut into 12 individual buns and shape them into balls. Place them on a baking tray lined with greaseproof paper not too far apart if you want them to touch each other.
Cover with a tea towel and leave to rise for 1 hour until doubled in size again.
Meanwhile preheat the oven to 200°C.
To make the flour paste, place the flour and water in the mixing bowl and stir 10 Sec. / Speed 2.
Scrape down and repeat 10 Sec. / Speed 2. Fill into a piping bag with a plain nozzle and pipe over the uncovered buns in a cross shape.
Bake in the oven for 15-20 minutes. Then, remove from the oven and make the apricot glaze. Place the apricot jam in the bowl and melt 2 Min. / 90°C / Speed 1. Using a brush, glaze the buns with the melted apricot jam immediately.
I bet you that is you bake them in the morning the whole house will fill with lovely aromas.
