Thermomix Monkfish and prawns soup

Thermomix Monkfish and prawns soup

Ingredients for 6 servings:
500g peeled prawns and reserve the shells
500g monkfish tail without skin cut into pieces (reserve the bone for the stock)
800 ml of water
Approximately 70g carrot, peeled and chopped
Approximately 70g leek (white part only)
3 cloves of garlic
50gr extra virgin olive oil
Brandy 50gr
400g canned chopped tomatoes
1 tablespoon rice paella or risotto (to thicken)

2 fish stock cubes
A pinch of saffron
Salt
A few drops of tabasco (optional)

Preparation:
1. Put in the bowl the shells of the prawns and monkfish bone, add 500g of water and cook 7 minutes, 100º, speed 1.
2. Remove the shells and bone and reserve the stock.
3. Rinse the bowl and add the carrot, leek and garlic and chop 3 seconds on speed 5. Scrape the sides.
4. Add the oil and saute 6 minutes, Varoma, speed 1 without the measuring cup. Add the brandy and evaporate for 1 minute, Varoma, speed 1.
5. Stir in tomato and rice, cooking 5 minutes Varoma temperature and speed 1.
6. Add the saffron, salt, stock cubes and the reserved fish stock programes 6 minutes, Varoma, speed 1.
7. Add the remaining water 300ml and blend for 30 seconds progressive speed 5-10. You can add tabasco if you like.
8. Pour the fish inside the bowl: prawns and monkfish and cook 1 minute, 100 °, turn left and speed spoon.

Serve with crusty bread or the way a I like it is to put a couple of big croutons rubbed with garlic. This soup can also be made with cod.
